Fermentation Générale
A unique and welcoming spot centered on fermentation, Fermentation Générale is a micro-bakery, lacto-fermentation workshop, and natural wine cellar. Here, no sulfites, no chemical yeast—fermentation rules. All breads are made with natural starter. Bread and fermented vegetables are made on-site.
Why we love them: All vegetables come from Île-de-France and most flours come from Châlons-en-Champagne. Seasonality is respected: you’ll find lots of kimchi in winter because it’s cabbage season! Fermented vegetables are available in bulk, along with several freshly milled flours. Your containers are welcome and jars are returnable with deposit. As for anti-waste, when there are leftovers (which is rare), old bread delights the chickens of one of their suppliers, and peelings feed their friends’ compost.
Their recommendation: La Pompette, a sweet bread with oranges, almonds, and olive oil (€6 for approximately 300g).
