Faussaire
For over 15 years, Faussaire (formerly Paris Terroirs) has delighted the neighborhood with nearly 450 natural wines. In a polished, sleek, modern setting, you’ll find mainly small-batch wines or wine from rare, lesser-known estates.
The Loire, Burgundy, and Rhône Valley take center stage, but Dom and his team don’t overlook any quality estate and work without geographical prejudice. As for international wines, you’ll find plenty of Greek wines, some Italian selections, and wines from Armenia.
Wine selection is done through tasting. Everything that isn’t labeled is rigorously tasted, and these are often small, excellent estates that don’t want to pay for costly certification.
Why we love them: The entire range is certified organic or biodynamic—Demeter, Nature et Progrès—with a strong proportion of wines vinified and bottled without SO2, and naturally, no industrial organic. They don’t mind slightly cloudy or fizzy wines, but the bottles are impeccable with no aromatic flaws. At Faussaire, they obviously prefer natural wines—meaning no lab yeasts, pesticides are banned, and vinification is as hands-off as possible. Corks are recycled, and kraft bags have been replaced with reusable organic fabric bags good for 5,000 uses.
Their recommendation: Chinon, Château de Coulaine. Tastings available by reservation for groups of 12 to 25 people, plus space rental.
