HOBA
Dedicated to sustainable & joyful food, HOBA is a food court nestled in the heart of Parc Martin Luther King in Clichy-Batignolles. At HOBA there are two main buildings: one called HO (up), the other BA (down).
In the upper floor HO, there’s a terrace to relax outside. In the large glass hall: 5 chefs prepare low-carbon cuisine and a big bar for sustainable refreshments. In the lower floor BA: it’s a more intimate vibe with a café, cooking workshops, and other types of programming.
Why we love them: Here, dishes are measured not just in flavor, but in carbon! HOBA sets a mandatory cap—no dish above 2.2kg of CO2 on their menu. For example, at Le Falaf, 90% of their products come from Île-de-France. This long-term work with small local producers ensures natural seasonality: the menu adapts accordingly and based on what arrives! The pork at Mouflet comes from Maison Montalet, an artisan charcutier from the village of Lacaune. Raised in Tarn and Aveyron with slow growth, fed grains from the farm, without antibiotics or GMOs, the local pork is then dry-cured before landing in the kitchen. For drinks, it’s 100% organic and natural wine, craft beers, alternatives to industrial sodas, maximizing deposit returns for containers and bottles. And when the party’s over, all organic waste generated by the kitchens and dining room is collected by Les Alchimistes to be transformed locally into compost.
